السمبوسة من أشهر أكلات العصر الفاطمي و كانت تطبخ بعجينة البتاو 

و خبز البتاو مثل ما ذكرنا من قبل هو متوارث في مصر من العصور القديمة و كان من اشهر انواع الخبز عند قدماء المصريين و كان يوجد منه أنواع مختلفة رقيق و سميك و طري و جاف

و انتقل البتاو للدول العربية الأخرى بإسم "الرقاق"

السمبوسة الحلوى كانت بتتعمل بالرقاق المحشو مكسرات و تمر و مسقي بالشربات او الجلاب و كان يسمى بالأسيوطية لأنه كانت وصفة من أسيوط 

حتى في كتب الطبخ الشامية في دمشق كان يسمي "بالأسيوطية"

و كان في سمبوسك حلوى من عدة ورقات من عجين الرقاق الطري ملفوفة و محشية مكسرات و عليها شربات تشبه إلى حد كبير "البقلاوة" المعروفة حالياً

السمبوسك باللحم هي تقريبا نفس طريقة صينية الرقاق المصرية المعروفة حالياً لكن الفرق انهم كانو بيسلقو اللحم الاول و يهرسوها بالبصل و التوابل و يحشو بها الرقاق لأن فرم اللحم النيء كان صعب أيامهم. 

وصفات السمبوسك او السمبوسة مذكورة في عدة كتب للطهي العربي، و خاصة المصرية منذ القرن التاسع الميلادي و يقال انها انتقلت للهند ما بين القرن الثالث و الرابع عشر بنفس الإسم عن طريق المماليك، و في رواية أخرى يقال انها اتنقلت عن طريق الاحتلال البريطاني. 

و طبعاً عجينة السمبوسك اتغيرت بالزمن لحد ماوصلنا للعجينة السريعة المعروفة حالياً

تابوت مسجد العطارين لما الفرنساويين دخلوا الاسكندرية، وابتدى علماء الغزو الفرنسي "الحملة الفرنسية" يسجلوا كل الآثار الموجودة في الاسكندرية، ظهرلنا في كتاب وصف مصر مسجد معروف باسم مسجد أثاناس ..والمسجد اتعرف بالاسم ده لأنه اتبنى على انقاض كنيسة للقديس أثاناسيوس، وهو أسقف الأسكندرية وبابا الكرازة حوالي عام ٣٢٨ ميلادياً سجل علماء الحملة الفرنسية تفاصيل "جامع أثاناس" بالتفصيل، والمنطقة المحيطة به، ومن ضمن ما تم توثيقه هو حوض مياه ضخم من الجرانيت الأسود،به ٨ فتحات على ٣ جوانب وكان يستخدم في الوضوء في الجامع، والجامع ده هو مسجد العطارين. وأمر نابوليون بضمه لمجموعة الآثار اللي اتاخدت من مصر، زي حجر رشيد وتابوت آخر من القاهرة يعرف باسم الحوض المرصود علشان يتعرضوا في فرنسا...ولكن بهزيمة الفرنساويين على يد الانجليز التابوت وقع في ايد الانجليز واتنقل مع التابوت التاني وحجر رشيد إلى المتحف البريطاني في لندن، وكلهم معروضين في قاعة الآثار المصريةعني تابوت مصري قديم من القرن ٤ قبل الميلاد، كان في كنيسة من القرن ٤ الميلادي، واللي اتهدت بعد كده، وبعدها بمئات السنين اتبنى جامع العطارين مع الفتح الاسلامي لمصر، واتجدد مرتين... اسكندرية كل شبر فيها تاريخ، وحقيقي مدينة فوق مدينة فوق مدينة، وحتفضل طول عمرها لغز يحير كل الناس!
